Fennel is considered an extremely healthy vegetable. It contains many minerals such as calcium, potassium, magnesium and iron. There are even more minerals in the green fennel than in the tuber. Fennel green contains omega-3 fatty acids, including α-linolenic acid, which provides anti-cancer properties. I am going to use the Fennel green to make a pesto.. and use the tuber to find out if Goulash with fennel is tasty.
